My buddy does this, as he is a machinist, but he can balance them as well. The lightest we've done is to just over 10lbs. down from like 18 stock. It's been driven hard in a turbo del sol, and it's doing fine.

my a6's OEM flywheels is missing 8lbs of material.. for 5 years. (previous owner did it)
