its hard to believe that an o sensor code will cause me to go into limp mode, is there another cause of code one?

Are there any other codes that come up at the same time?
Are you sure its the full meal deal limp mode? Do you get the 3500ish rev limit?

Even if you read it wrong and it was a code 10 IAT, that wouldnt put you in limp.

The only thing I can think of, is if your part throttle map is a smidge lean, and closed-loop was cleaning it up for you, then the car would run like a bag of ---- when it CEL'd the o2.

If it does hit a lower rev limit (free reving), will it only do it at small throttle openings, and then go away if you go WOT?
