Steak is best still juicy. The rarer the better. Just brown the top and bottom and get the middle warm enough to kill ecoli or whatever comes in raw meat that can kill you.

believe me....i do this ---- like this for 10 hrs a day

imo the only meat that tastes good fried in olive oil is salmon steaks

anything else is just fucked up

olive oil gets a HEAVY nasty taste that can only be over powered by the basil/rosemary that you toss in with the salmon when you sautee it

well since you do this 10 hrs a day, please let me know where you work, because according to all things i have seen, that ----------er is rare. there is absolutely nothing that says its remotely close to being medium....

hell, according to this chart, its not even rare...
