If you think that unhooking it when things freeze will work then you are mistaken. You would still have all the plain H2O in the cooling sysytem.

If you run plain watter then you run water wetter, and you live in the south where noone knows what snow is.

Hook up your coolant lines to the turbo, it will help cool the turbo durring operation and extend the life of the turbo, and the engine oil also. It will cost you an extra $3 in hose and fittings, highly worth it.

Just extend your stock cooling loop. Insert the turbo into the circuit just before the IM.
