Probably just a standard pitch thread.. Nothing special, you can get brass fittings at local hardware/screw type stores.

can i block them off and let just the oil cool it, or would that just be dumb?

That would be just dumb, because it takes like 15 mins to hook up the coolant lines, and it will extend the life of your turbocharger. But I cant argue much, because I have been lazy myself and not hooked them up on a few setups.
