Leave the power steering alone. My 94 yota pickup didn't have it and my 98 civic has it. Big difference. And for the 2 HP it robs you won't notice it.
As for the real issue the A/C, I would hate to remove it on my car because it is handy for defogging the windows and cooling off, especially if it works perfectly. But you can do either:
1) Rip the AC system out and sell it on E-bay. You could get $100-$200 for it probably.
2) Buy an A/C compatible manifold or fab one up.
