If most of the map was lean, wouldn't it be easier to adjust the fuel multiplier before messing with individual cells.

Do the pulls in 4th on the highway late at night, if you do it in third it's not going to be completely loaded at the top end and you can run into a lean condition that could cause big problems when you pull high in higher gears.

Yes and no. I'm fairly sure that in the newest Crome you can just select cells to adjust by percentage, rather than adjusting the entire map, i.e. you're idle/part throttle are fine but WOT is leaning out, just select the columns appropriately and adjust as a whole according to the average.

Then fine tune the cells.
