Basically, the turbine "stage" is a way to refer to the size/trim of the exhaust turbine wheel.
Stg-1 (Smallest) Standard on most .42/.48 Garretts (saab, volvo, etc.)
Stg-2 (Medium) Comes on larger T3's, Standard on most T3/T04b
Stg-3 (Large) Standard on most T3/T04e
Stg-5 (X-Large) Somewhat overkill for a T3 based turbo. Comes standard on SC61's
There's a somewhat quick explanation. The size of the wheel will have an effect on spool time (smaller=faster) along with turbine housing A/R however a bigger wheel will usually give a little more top end (providing it is matched properly with the compressor wheel). Much like having a huge turbo in general, thinking you need a large turbine wheel "just because" will most times hurt performance rather than help.
