yeah, you definitely got use the 'curds'.

Ever try Rasputine? That's when you substitute the gravy for Chilli , yum! :)

We also have the "italian poutine"

which consist of switching turkey gravy with tomato/meat sauce

This one is also badass ;)

i really enjoy Chenoy's smoked meat poutine
^-^ heaven...

using mozzerella isn't recommended, people should use some cheese curds straight from " Le Lac" (region in Qc)
