The other fries were a lot bigger than mcdonald one. Mcdonald fries are very small so the oil cook well all the inside. Its like banana chips, put them in a pot and wait for them to get black. You will wait a long time ;) Oil is a good way to conserve food.

mold will grow on something that contains no water. like dry glass for example.
it just happens to grow faster in a damper environment.

Tell me ONE living thing that will grow without water. Mold needs moisture, some places humidity is enough. McDs fries are thin, upon hitting the oil, most the water evaporates and it becomes soaked with oil instead. The little water that does remain is probably trapped inside the oil soaked substrate and the mold won't grow.

Same here. There might have been once or twice in which I was with someone else that decided to go to mcdonalds and I had to go against my will, but I haven't been to mcds on my own since I moved here in 2002.

Their fries are ------- good though.

Moisture, humidity sits on top of oil.

Nothing lives without water.
