The gaps on the plugs look massive to me!

What are they gapped to?

One thing about normal plug reading, I'd hate to just suddenly cut the oil flow to the turbo after a WOT pull...

Yeah, but most of the guys doing this are high output N/A motors. The thing will run for a few more seconds, so it's not like you're going to sieze it right then and there.

Not to mention there won't be that much boost in the turbo while in neutral, not like you have the load of 3rd gear behind you.

A WOT pull is useless without load, and it's unlikely that you'll coke the bearings at once but I don't think it's good practice to do this repeatively on an oilcooled turbo.
