If your running stock timing your EGT's are probably to high.

Drain your current engine coolant, flush out engine, refill with water and wetter. I recently had the same problem and this solved it.

the exhaust temps will go up if you cruise around w/ pretty retarded ignition tming

did you get all the air out of the cooling system? i know on my single cam i didnt get all the air out and it was fine just driving around but when i got on it the temp gauge started to rise really fast. i dunno just a thought.
