Stock boost should be about 15psi from the factory, your best mods to do is an up-pipe/downpipe combo and a nice 3" exhaust. That combined with a good tuned reflash will make that car feel like an entirely new machine, especially since there's like 3 different cat's on the car and the stock up pipe going into the turbo is only a 1.5" hole. My '04 WRX with an upgraded Forced Performace 16g6 and other mods is skeet skeet skeetin' all over the local turbo honda's hardcore.

Don't bother with the STi up-pipe if it still has a cat section in the middle. Ebay has tons of cheap up-pipes that'll do the job just fine. Trick to keeping them from leaking and breaking after a while is you have to unbolt all the brackets attaching the turbo to the motor. Once you've got them loose you can put the up-pipe in and after that re-attach the brackets and torque them down. Also would be a good idea to unbolt the motor mounts and jack the motor up a hair to give some better access for that up-pipe...you'll see what I'm talking about when you get under there lol.
I don't know about your stock gauge, but my stock gauge reads in MPa...not bar. When mine was stock it usually swung just a hair over .1 MPa (.1MPa is almost 1 bar) on my '04, or around 15psi. I'd just get a different gauge that reads in psi or whatever you're comfortable with (I'm getting quite comfy with kPa lately lol) just to make sure. And dollar for dollar, you'll probably be better off getting a cheap ebay 3" exhaust too that should fit with no major issues. Making exhausts is a pita these days lol.
