Bah! You don't need any guages . Just kidding, if you need/want 3 guages, I'd personally go with Boost/Vacuum, EGT, and oil pressure. For measuring your air fuel ratio's, try and look into picking up a wideband o2 meter. Those Narrow band Af guages don't really tell anything at all. Theres been plenty of articles posted about them, so read up.
And also for a manifold that will accept AC and be about 250, there are quite a few choices. your best bet would be to go with a "log" style manifold. There alway's on ebay and even for sale in the classifieds here.

It depends, you can get a PLX M300 or the Zeitronix units for about $300. I know it sounds like alot of dough, but it's definately a wise investment to make your engine last. It's the only way to tune correctly and actually see whats going on.
If you have a friend with a wideband setup, maybe you can hook that up and tune it out with theirs.

If you don't go with the WB, then the three most important in my mind are Boost, H20 temp, and oil pressure. That way you can tell what the turbo is doing, and what the engine is doing.

I rock nothing but these. The most important three in my opinion.
