What determines the ecu reading from the high and low fuel maps in uberdata?

It's not Uberdata's decision, until you start disabling checks in the stock programming.

VTEC Coolant Temp, VSS, VTEC oil Pressure, TPS percent, and RPM are among the few.

Correct, wherever you enable your vtec points at, you will need to go back and set your High fuel and ignition RPM's and values based on what RPM rang your Vtec will be at.
