Why wouldn't you use the new one? The old one should slip right off, unless it's all fucked up. I would replace it with the new one.

How many miles are on the tranny? It's alway's a good idea to replace the throwout bearing especially if it's got some mileage on it, but when I upgraded my clutch i kept the stock throwout bearing because my mileage is so low and i've had no problems.
If you do end up replacing the throwout bearing, it just unclips out of the clutch fork, and you snap the new one in. It's pretty self explainitory once you get the clutch out and you see it.
