bad thermostat? fluxuating temp gauge
 
whenever i get into it the stock temperature gauge keeps on going to the cool side
it eventually goes all the way down if stay in it for a small period of time, most noticable in 5th gear
-yes its full of coolant and holds pressure
-its been going on since before i have been turbo'd
-the only thing i can think of is a bad thermostat

also the thermo might be sticking halfway open, mine did that. ran without a tstat for a while then when winter came I put a low temp in. haven't had problems since.

Air pockets would cause him to have hot spikes, not cold spikes

its not a quick spike, it just goes all the way down to cold , until i let off
if there was an air pocket i think it would continuously go from cold to normal operating temperature and not just stay cold

ever been in or worked on a car with an air pocket in the cooling system? besides you never stated it STAYS cold, or how the air blows out of the vents. turn your heat on full, blast the fan for a while, maybe have some luck moving it

Put a T-stat on it dude. The last 3 honda's ive bought had theirs stuck half way. Its like $3.29 not a big investment... :l
