That and a lack of proper funding, a lot of people try to do these huge fancy restaurants and they don't have the cash to back them when they don't bring in enough revenue from the get go.
Where as what you're going with a simple, but nice taco place in a in such an ideal location as you snagged up will go great.
So you still bringing in larger crowds daily? Whats you're food cost like its, gotta be pretty good.
