Try this...

Scoop out the guts of your pumpkins, and fill the bathtub with cold water. Submerge the pumpkins in the water, let them soak overnight. Lids too. When you take them out, they will have absorbed a shitload of water... they'll be hard as rocks. When you carve them make sure to put vaseline on the exposed edges where you cut (this makes them 100x easier to carve too), this way they'll last forever. 1-2 weeks

 

edit, do you carve the pumpkin, then put it in the water?
