So you add wood chips and ribs to the water? wet rub or dry?

wood chips (wet) are used to smoke the meat.

low heat, container blocking the flame from direct heat (smoking hte meat with woodchips, actually), something to keep juices from hitting the flame and going inferno, and a good set of ribs.

unless your grill was made for slow cooking

my old grill had three burners, I would place the wood chip box over the left burner on low then put the boston butts (pork) on the right side, seal it up as best as possible.

Try to hold 200-220 degrees, add wood chips every 1:15-10, took 12-14 hours to smoke/cook.

I hate ribs.....I used to cook them when I was a teenager at local hotel. They still use my recipe.

the key is to boil teh ribs for a bit before hand. just a bit, then you will never have dry ribs
