my old grill had three burners, I would place the wood chip box over the left burner on low then put the boston butts (pork) on the right side, seal it up as best as possible.
Try to hold 200-220 degrees, add wood chips every 1:15-1:30, took 12-14 hours to smoke/cook. I hate ribs.....I used to cook them when I was a teenager at local hotel. They still use my recipe. |

the key is to boil teh ribs for a bit before hand. just a bit, then you will never have dry ribs ;)
