HMT Recipes: Chili

2 lbs steak cubed 1/2 X 1/2 X 1/2
1 lb italian sausage 2 15 oz cans chili beans-mild sauce-drained 1 15 oz can black beans-drained 1 15 oz can chili beans-spicy sauce 2 28 oz cans diced tomatoes w/ juice 1 16 oz can tomato paste 1 yellow onion-chopped 1 green bell pepper-chopped 1 red bell pepper-chopped 2 green chili peppers-chopped 1 clove garlic-minced 1 tablespoon bacon bits 1/2 cup beer 1/4 cup chili powder 1 tablespoon worcestershire sauce 1 tablespoon dried oregano 1/2 bottle hot pepper sauce (tabasco, cholula, etc...) 1 teaspoon dried basil 1 teaspoon salt 1 teaspoon pepper 1 teaspoon cayenne pepper 1 teaspoon paprika 1 teaspoon white sugar couple ozs of white vinegar Chop the peppers, onions, garlic, and mix together in a big bowl Fry up the steak in a skillet until browned on all sides brown the sausage put steak and sausage into big pot over medium heat Stir in liquid based ingredients (beans, tomatoes, beer, etc...) Slowly mix in your bowl of peppers, onions, garlic slowly mix in spices one at a time Bring to boil then lower temp to simmer. Simmer at least 3 hrs. Mine has been simmering for 5 hours so far, and I won't be eating it for another 4, the longer you simmer the better it tastes and the more tender the steak gets. This is a very soupy chili mixture so serve it with a slotted spoon to drain some of the liquid out. Top with corn chips, cheese (i use colby jack), and sour cream (if you want, I don't). Didn't know you could get kokanee in the US.

Sure can. It's huge in hippie states (MT,CO,WY, etc...)

Love chili.
Only seems to be missing jalepenos and such. |
