put the potatoes on the middle rack of the oven and roast them till they look like this (about 35 min)

top it with creme fraische and chives (seen here) or sour cream will do and eat it with a nice medium rare (see the Panty dropper write up by Slos13) steak (like the fat ass new york steak i took home from work)

I hit Post on my Ziti recipe to discover that you've stolen my thunder not once, not twice, but three goddamn times.

If it didn't look so good I'd hate you for it. :P

I'm about eight years from being worth a ---- with a welder, and that was flat coupon mild steel. You can learn to weld as well as I can with pretty minimal effort. :6

It'd be convenient if the OP's would quote themselves and post it in the recipe thread.

Instead of links just a whole thread of recipes.

He runs a restaurant, IIRC. It shows.

I looooooooooove some shallots, but I've never cooked with any. I need to correct that in the near future.

That's the thread I mean, chris's thread.

It's just links, which is annoying, I want like one long recipe thread.

Maybe I'll do it.

I improv'd on this recipe for the T-day meal tomorrow; quartered potatoes, sweet potatoes, and turnips with garlic, shallots, onions. I have it in a bowl in the 'fridge tossed in olive oil, pepper, and rosemary, and will roast it tomorrow.
