A normal Air/fuel gauge will jump back and forth when the ECU is running in closed loop. When the O2 sensor senses rich, it leans out the mixture, then the O2 sees lean so it richens the mixture. (back and forth)

When the ecu goes to open loop, (wide open throttle), it will run directly off of the maps and the meter will no longer move, it should hold at rich

You may have a problem with your o2.

At idle mine bounces around from lean to stoich (sometimes pushing near rich, but never gets to it). On full throttle it will hold rich (by third bar I think on the gauge). At any other point of throttle it will burn slightly lean - to stoich, not bad considering thats before the catalytic converter

Mine bounces back and forth too. Actually the faster it moves the better. As long as your not staying in the red zone you should be ok.
