Default 85 ford ranger questions

ok well my budy has a lifted 1985 ford ranger that he wants to boost after he saw my setup. its a v6 2.8 ltr with a 2 beral carb. now im wondering if we wanted to boost it could we run onely one manifold or do we have to run both to the turbo. also since its a carb can we just give it more fule by turning in the fule/air screw and tune it on a yband. would we have to worrie about watter or mud geting splashed on the turbo when hes giving her through mud pits
happy to get any input thx guys
