soooo, could I just weld the manifold while it was bolted to the head, or would that run the risk of warping the head from the metal warping?

it wont hurt the head, as long as you dont blow through the flange

I know i'ts late but it looks good for an arc welding . and I recomend relife cuts in the flang so you don't sheer the studes . don;t forget ! it's SS and it expands more then you think .
