Are there any good books out there or write-ups that thoroughly explain internal combustion engines and tuning?

also, i know that with turbo edit you can set launch control, but im not sure how you do that. i didn't find the option for it in any of the menus.

It may not be enabled in the ROM right now but it would be under properties I believe...

Launch Control works.

File -> Properties -> Launch Control

Put a check in the box to enable it, set your RPM. Don't mess with the speed just yet.
