I thought a pirogie was a potato dumpling? That looks like polish shepherd's pie. Nothing wrong with making a meal of it, but I think it's named wrong?
BTW, I made a post in the Mod forum about a subforum, or a stickied master index thread to catalogue all the HMT how-to food write ups. Whether Jon's potato excellence or buk's pigeon thread, this ---- is on.

pierogie casserole is traditionally just onions, butter, noodles, (sometimes sauerkraut or cabbage) and mashed potatoes, all i did was change from egg noodle to rotini (1. it sticks less, and 2. it was what i had), and add cured pork/bacon to the mix.

The link is in french, but its only steak (bake some onion with that), corn and smashed potatos. Mix all that ---- with ketchup and its ------- good. There is less fat in that one too....

making it traditionally is probably the best way.
and JD, pirogies are mashed potatoes wrapped in a noodle flap basically. sauerkraut is pretty popular in place of potatoes. find some old church im sure you could find some polish ladies making these in the back for friday lunch orders
