It should only take 1/2 hour to remove the old head if he has all the a/c and power steering ---- off already, add another 30-45 minutes if he doesn't. Hell, I swapped in a d15b vtec into a friend's 95 cx and converted his p05 ecu to p28 standards and got him up and running and fully wired in about 6 hours, and this was without any sort of engine hoist. If you haven't done alot of swaps/head swaps give yourself a few hours and make sure you have a service manual with you just in case.
Like Chris said, charge more as problems arise. I'd start out at $200 personally.

400 is a hell of a deal, especially since he's to lazy/stupid to do it himself. any regular shop would charge him 1k in labor to swap a blown stock engine.

You have to factor in that almost never does a job just go perfectly smooth aka stripped bolts,rusted bolts that break etc etc etc
Shops charge 55+ an hour because well there not 18 year old tools who cant fix a lawnmower.
I wouldnt do it for less than 250
