sorry, I've been in the food industry for 22 years, med. well is how I cook everything.

150 internal on big items, then wrap in alum foil and it will hit 160, which is perfect.

Heres a great carne asada one, cheap mexy beer, soy sauce, orange juice(not to much), chopped white onion, cilantro(spelling?), crushed dried red peppers, crushed garlic, and a little pepper and let it sit overnight. Good to go.

bad temp for any food product is between 40-140 degrees. Thats the zone when bactieria is most likely to grow.
