Default HMT repipe: steak and cheese casserole ..or somethin

well, haven't made this in forever. my uncle loves steak and cornbread, so what the ----, i used to serve this when i was a s/o cook on second shift once in a while, so why not make it?

pretty simple.

make a single batch of cornbread batter
(this recipe is for this meal, not std cornbread. std cornbread is 1c flour, 1c corn and 1T baking powder)
1 1/4 SELF RISING flour, 3/4c cornmeal, 1.5t baking powder, 1t black pepper, 1/2t salt, 1/4c sugar, 1 egg, 1c milk, 1/4c melted butter/marg/shortening/oil

mix all ingredients, beat for like a minute and a half

this is the bottom of the pan (mozzerella ------ over, i had no provolone)

2lbs of ground beef (if you can get diced steak patties these are better to use, but beef/cut steak works well too), one small to medium onion, (no bell pepper used this time, but should be in here) 8ozs mushrooms, 2t beef bullion, 1/4c water, 1T ea parsley and cilantro. cook the beef with all this in a pan for like 10mins or so until its all browned, drain all liquid from this. seperate the oil from the bullion broth thats left over (use a clear glass and turkey baster) to get about 1/2c of liquid, no grease, and put back into beef. cook for 20 while youre making the cornbread and ------ing half into the pan

then ------ evenly (or sloppy) over the shredded provo/mozz

now we layer sliced or shredded swiss over the ground beef

next we add the rest of the cornbread mixture.

bake in oven at 400 for 35mins, or until top starts to brown.

best served hot
